Ingredients

Method

  1. Preheat the oven to 375 degrees F (190 degrees C).
  2. Combine flour, salt, baking powder, and sugar in a bowl. Whisk until thoroughly combined. Grate in the frozen butter, stopping occasionally to toss the butter into the flour mixture until coated. Drizzle in vanilla extract; add egg yolks. Stir with a fork until egg is mostly absorbed. Add vinegar; mix briefly. Use your hands to finish mixing, squeezing until clumps but mixture remains mostly dry. Add 1 teaspoon vinegar if needed.
  3. Combine blueberries, raspberries, and blackberries in another bowl. Add lemon zest, lemon juice, sugar, and cornstarch. Sprinkle in cayenne pepper. Mix until sugar and cornstarch are mostly dissolved.
  4. Place about 1/2 of the crumble mixture into the bottom of a 2-quart baking dish. Press mixture down using a flat cup until well compacted. Spread the berries over the crust. Sprinkle the remaining crumble mixture on top, squeezing some of it into clumps.
  5. Bake in the preheated oven until top is beautifully browned and berry syrup bubbles on the surface, 40 to 45 minutes. Let cool to room temperature, about 30 minutes.

Instructions

  1. Place the filling ingredients in a large saucepan and bring to a low boil. Boil this berry mixture for about 15 minutes or until it has lost about half of it's liquid.
  2. Preheat your oven to 325 degrees F.
  3. In a food processor or blender, place all the topping ingredients and blend until it's starts to look crumbled.
  4. Place the filling in a baking dish and then sprinkle the topping evenly over the top of the filling.
  5. Bake for about 15 minutes, or until the topping starts to brown.
  6. Eat warm or cold, with ice cream, yogurt, or just by itself.

I bought several bags of frozen blackberries for smoothies, however it seemed a shame not to make a berry crumble of some sort. Blackberries are abundant here in the Pacific Northwest, and not always in a good way. They invade our soil and dig their heels in. But right now I'm celebrating blackberries, even though the vines around here don't have the slightest hint of fruit on them. Method

  1. Preheat oven to 375 degrees F.
  2. In a large bowl, gently combine blackberries, sugar and all-purpose flour. Transfer to an 8 x 8 baking dish.
  3. For the crumble topping, combine all ingredients in a medium bowl and work together with your hands until the ingredients resemble a crumble.
  4. Sprinkle the crumble topping over the blackberry mixture. Bake crumble until the the topping is golden brown and blackberries are bubbling, about 40 minutes. Let cool for 15 minutes before serving. Serve warm or at room temperature, with ice cream if desired.

  1. To make the crumble, pour the muscovado sugar, ground almonds and flour into a roomy bowl and mix well. Rub in the butter until a lumpy, crumbly dough starts forming.
  2. Place the crumble mixture on a baking tray that has been lined with baking parchment. Bake for 20 minutes, then set the crumble aside to cool.
  3. Slice the strawberries into small pieces and then place in a saucepan with the blackberries, caster sugar, and lemon juice.
  4. Place on a medium heat and keep mixing, so as to form a soft compote syrup, mashing the berries with a wooden spoon. This should take around 8 minutes. Take off the heat to cool slightly and mix in the rosewater and elderflower cordial.
  5. To serve, place the strawberry compote syrup at the bottom of a serving cup or plate and sprinkle the crumble on top. Serve with fresh cream.
