Makes: 1 cocktail

Ingredients

45ml Chapel Down Bacchus Gin
Chapel Down Brut NV
15ml lemon juice
7.5ml sugar syrup
Lemon zest for garnish
Ice

Method

Fill a cocktail shaker with ice.
Pour the lemon juice, sugar syrup and Bacchus Gin into the cocktail shaker.
Shake well (20 seconds) then strain into an iced sparkling wine flute.
Top with Brut NV. Leave to settle then fill up with more sparkling wine.
Swirl gently with a cocktail stirrer then garnish with a strip of lemon zest.
