Prawn Alfredo #347

This dish could not be easier to make and is ready in no time at all. It has to be one of mine and my SO's favourite pasta dishes and is very popular amongst our friends.

Ingredients

Method

  1. Add the pasta to a pan of boiling water and cook until al dente.
  2. Mix the prawns with some olive oil and seasoning to taste.
  3. Melt some butter in a warming pan.
  4. While the pasta is cooking sauté the shallots and grated garlic until soft and golden.
  5. Add the prawns to the hot pan until they are just cooked through.
  6. If you want to add some heat, add the chilli flakes or paprika.
  7. Remove the pasta and drain but keep the starch water back.
  8. Add the white wine and a splash of lemon juice to the hot pan and reduce.
  9. Once the wine has reduced add the cream and simmer for 2-3 minutes.
  10. Add a few spoons of starch water to thicken.
  11. Add the parmesan cheese and nutmeg.
  12. Mix the cooked pasta and prawns until covered in the creamy alfredo sauce.
  13. Serve topped with some fresh parmesan and fresh parsley.

Ingredients (serves 2)

Method

  1. cook Linguine as per instructions
  2. cook the onion and garlic on a medium heat on nice amount of olive oil and butter until softened
  3. move onions to the edge, turn up the heat a little and add the prawns
  4. cook the prawns for a couple of minutes on each side until browned
  5. pour in a splash of white wine and cook off the alcohol for a few mins
  6. add tomatoes until squishy and squish with a fork -add lots of Parmesan
  7. season and add the herbs
  8. take the pasta directly from the water and add to the pan (don’t drain as a little pasta water is great for the sauce)
  9. Mix and serve
