Carrot cake #351

Ingredients

For the icing

Method

  1. Heat the oven to 180°C.
  2. Grease 2 x 20cm sandwich tins.
  3. Beat the butter, eggs and sugar until fluffy.
  4. Fold in the remaining ingredients along with the milk to loosen.
  5. Divide the mix between the two tins.
  6. Bake for 35-45 minutes until a skewer comes out clean.
  7. Cool in the tins briefly, then on a cooling rack.

For the icing

  1. Beat the butter and icing sugar with the lemon zest.
  2. Add the cream cheese and continue to beat.
  3. Place icing on the top of one cakes before placing the cake on top to form a cake and icing sandwich.
  4. Top the cake with the remainder of the icing.
  5. Decorate the icing with crushed/chopped walnuts and pecans around the edge in a circular fashion.

Notes

  1. Some recipes include strained pineapple and also raisins but I've next had a carrot cake with these ingredients in the UK.

Great cook. Noticeable nutmeg. SO would prefer icing on the side too! Next time try topping with crushed walnuts rather than whole ones.
