Creamy Tomato Chicken and Chorizo Pasta #441

  1. Peel and chop the onion, then chop the bell peppers and set to one side.
  2. Slice the chorizo into disks.
  3. Heat the olive oil a large frying pan over high heat, add the chorizo and cook for 2 minutes.
  4. Add the chopped onion and peppers and cook for another 2–3 minutes, stirring occasionally.
  5. Whilst the peppers are cooking chop the chicken breasts into small chunks.
  6. Add the chicken to the pan and stir around in the oil for 1-2 minutes until lightly golden. Add in the garlic and stir together until aromatic (less than 1 minute)
  7. Add the chopped tomatoes, Italian seasoning, sugar, salt, and smoked paprika if using.
  8. Bring to a simmer and then cook gently whilst you cook the pasta.
  9. Bring a large pan of water to a boil. Add a tablespoon of salt then pour in the pasta.
  10. Reserve a cup of the pasta cooking liquid then drain the pasta.
  11. Add the pasta to the tomato sauce mixture and pour in the heavy cream.
  12. Stir everything together until well coated, thinning the sauce with pasta water as needed.
  13. Stir through the fresh spinach and allow to wilt. Serve immediately with parmesan and chopped parsley.

  1. Heat the olive oil in a large saute pan, add the onion and cook over a low to medium heat for about 5 minutes.
  2. Add the garlic, oregano, smoked paprika and chilli flakes and cook for a minute.
  3. Now add the chicken and cook over a medium heat until the chicken is cooked, add the chorizo and cook for another 5 minutes until both the chorizo is slightly crispy.
  4. Pour in the tinned tomatoes, add a little water to the can, give it a swirl then pour that in too. Add the olives, salt and pepper, reduce the heat and simmer for about 10 minutes.
  5. Meanwhile, cook the pasta according to the packet instructions. Drain when done.
  6. When the pasta is almost ready, add about 3 tablespoons of the pasta water to the tomato sauce then add the spinach and basil, check the seasoning then add the drained pasta.
  7. Gently toss the pasta in the sauce, serve immediately with plenty of grated parmesan and freshly cracked black pepper.

  1. Heat a little oil in a wok or saucepan. Add the diced chorizo and fry until beginning to brown. Add the onion, red pepper, crushed garlic and chilli pepper and continue to cook until softened.
  2. Add the tinned tomatoes along with the paprika and simmer for 10 minutes.
  3. Start cooking the pasta.
  4. When the pasta is ready, stir it into the sauce before serving. Sprinkle grated cheese on the top if you like.
  5. A couple of minutes before the sauce is ready, stir in the two tomatoes that you've cut into wedges if you like chunks of fresh tomato in the sauce. (Optional)

Method

  1. Boil a large, salted pot of water and cook pasta al dente according to package directions.
  2. Prep your chorizo and chicken.
  3. Add the chorizo to a skillet on medium-high heat. Cook for 5-7 minutes, stirring occasionally, until it starts to render its fat and become crisp.
  4. Reduce the heat to medium and add the chicken to the pan. Cook it for a few minutes, stirring periodically.
  5. Add the garlic, wine, and Italian seasoning to the pan and cook for 2 minutes.
  6. Stir in the cream and diced tomatoes. Cook for another 5-7 minutes or until the chicken is fully cooked through (but take care not to overcook).
  7. Season with salt & pepper, to taste. Drain the pasta and toss it with the sauce. Add parsley and parmesan cheese if using.
