2 sweet potatoes, peeled and boiled (keep the water)
4 medium potatoes, boiled
1 tin butter beans, drained and rinsed
1 vegetable stock
Method
Peel and dice the pototes and bring to the boil in lightly salted water.
Once soft, train some of the water (depending on how thick you like your soup) and add the butter beans. Add Add a stock cube (or even half if you find one a bit strong) and blitz to the consistency of your choice.
Serve hot with a sprinkle of plant cheese (optional).
