What you need for 2:
250g Pasta
250g Cherry Tomatoes
1 Garlic Clove chopped
1 Tsp Oregano
Zest of Lemon(optional)
2-3 Tbsp Mascarpone
Parmesan Cheese
1/2 Tsp Sugar
Basil
Olive Oil
S&P
What to do:
Add tomatoes, garlic, oregano to an oven proof dish, season well and drizzle with lots of olive oil.
Cook for 15-20 mins at 180-200C until softened
Cook pasta until al dente and drain
Add mascarpone, basil, Parmesan & sugar to tomatoes and mix. Remove garlic 🧄 Add some pasta water to make saucier if preferred.
Add pasta, mix with sauce & serve with extra parmesan.
