SLOW COOKER CREAMY TOMATO BASIL CHICKEN WITH PARMESAN MASH Nutrition ⬇️ For the entire meal Calories- 579 Fat - 13.9g Carbs - 49.2g Protein - 61.9 Ingredients ⬇️ Serves 4 4x Chicken Breast Fillets 400g Chopped Tomatoes with Herbs 250g Tomato Passata 1x Tbsp Sun-Dried Tomato Pesto 2x Tsp Very Lazy Chopped Garlic 1x Tsp Basil, Dried 1x Tsp Oregano, Dried Black Pepper, To Taste 150ml Elmlea Single Cream 1x Tbsp Cornflour Basil, Fresh 800g Red Potatoes 30g Parmesan Cheese, Grated 30ml Semi-Skimmed Milk 1x Tsp Butterly Light Spread 16x Tenderstem Broccoli Stems Method ⬇️ Place the slow cooker on the LOW setting. Pour the tomatoes and passata into the slow cooker pan and season with Italian herbs, garlic, pesto and black pepper. Measure out the single cream in a Pyrex jug and whisk in the cornflour. Pour the cream into the slow cooker and add a handful of fresh basil leaves. Mix well with a wooden spoon. Next, submerge the chicken breast fillets into the sauce and cover with lid. Cook for 4 hours. Bring a pan of peeled and chopped potatoes to the boil in a pan of salted water. Once soft, drain and set aside. Season with a little salt and pepper, then add the milk, butter and grated Parmesan cheese. Mash until smooth. Serve the chicken and sauce drizzled over the mashed potatoes, with a side of tenderstem broccoli.
