Another possibility to attached the probe is to put it on the side of the cylinder, and attach it with a metal wraping system, with a thermal paste:

That seems ideal: to be screwed on the boiler directly, using one of the screw that is attached to the thermostat:

Alternatively, if I don't find an appropriate washer-style RTD, maybe I can buy a cylindrical probe, and interface it with a Closed Ring Tongue Terminal:
