add basic ES instructions

is a keyboard needed? how do you start a game with just a controller?

I'll start writing this up tonight in the project wiki.

Actually, I'm going to push this back a little. I started to try to think of what to cover, but I'd rather wait until the first stable release (or thereabout) where we're confident that the instructions are less likely to change.

I'll also make sure to do videos and link them from the future wiki.
