Release 6.1.0, drop Python 2 support

Many thanks to @bschoening for all his hard work upstream on the the core cqlsh code.

As a byproduct of this, cassandra 4.1 bumped the cqlsh version to 6.1.0 and also dropped Python 2 support (along with many other cleanups).

TODO:

[ ] bump underlying cqlsh and cqlshlib python code once cassandra 4.1 drops
[x] update PyPI classifiers to drop Python 2
[ ] update release date on the Readme of 6.1.0 from unreleased to whatever day this gets merged/pushed to PyPI.

This is blocked waiting for upstream cassandra 4.1 to drop, but thought I'd prep it anyway...

Actually, since this commit has just been up a few minutes and hasn't been published at all, I'm going to force-push to master to clear it... that way we keep git blame clean...
