Set up Sentry monitoring and tracing #196

Another improvement to enable easier support as in #195.

Sentry enables application performance monitoring and tracing which provides visibility into running systems to aid with operations and debugging.

The Sentry integration is optional and disabled by default. It can be enabled by setting the SENTRY_DSN environment variable.
