Add light/dark theme customisation option #48

Expanding on the helpful @shocklateboy92 by adding a selection option for users who want to switch between two themes depending on the systems light/dark mode auto switching

Now merged into dev branch and hopefully in production tomorrow, along with changes I've made to the PreferencesFragment to dynamically update the summary to include the selected theme for Dark Theme as well as an added function to ensure theme selection is reflected instantly in the preferences activity, without having leave the screen
