It should be grep -Po --color=never "tag_name": "v\K[^"]*'" instead of grep -Po "tag_name": "v\K[^"]*'" for getting the LAZYGIT_VERSION from git.
grep -Po --color=never "tag_name": "v\K[^"]*'"
grep -Po "tag_name": "v\K[^"]*'"
