By EU policy (General Data Protection Regulation - GDPR), it is not enough to inform that cookies are being collected, you must have an option to consent to cookies. Still, even if the person denies cookies, a set of minimum services must be released.
There are ready-made solutions written in js, such as: https://www.eucookie.eu/
We would have to add that on the website, and think about what these minimum services would be, or not collect cookies.
I haven't thought about any website regulations like cookie warnings. I have included some basic analytics, just to see how many people visit the website and what region they click on. Google analytics places some cookies, so I believe EU requires the website to have a notice.
I am also not sure if this qualifies as user data or not.
We have to take take of this subject before bringing the website online
