Add metrics endpoint #156

Hi, I wonder if we have or plan to have a prometheus /metrics endpoint? Thanks

Hi @hochuenw-dd, yes that would be a good addition. Is there anything in particular you would like to see, bar the usual suspects on the client and server of the proxy?
