It would also be great to have a collapse all context option or button. If you open a bunch of folders it's a pain to manually close them all. I need to learn more about TextMate plugin development, I'd love to be able to help out.

That sounds like a great feature. No idea how difficult it is, but it would be great for large projects.

You can already do this. By clicking on the arrow next to a folder, while pressing the option key, you can recursively expand or collapse all folders in the project drawer.
