If image size is still an issue, it might be worth having two versions of the base image: a full fat (with git, latex and whatnot), and a semi-skimmed version. It'd be fairly easy to accomplish, but given that we do not have an upper limit for image size and there's always more stuff to cram in, might not be very helpful...
