Neat experiment! Could this be packaged as a Docker image, so that users can test and deploy lightcube more easily?

Yes, certainly. More specifically, what was 'LightCube OS' has been renamed 'Mere Linux' and the repo is here: https://github.com/jhuntwork/merelinux. I'm in the middle of finishing up some documentation which shows step-by-step how the whole system was bootstrapped and will also include how to quickly set up for local development. Watch the merelinux repo for updates, I'm aiming to release the first draft of the docs in the next day or two.
