Replace Redis with Mongo for logs and persistent store

Currently, we're using Redis for:

logs: store logs that are displayed in Live Events
persistent store: at the moment, it's possible to opt-in for mongo for particular workspace, but by default Redis is used to store events
as a fast store for Rotor, however this is a subject of another github issue

Our plan is as follows:

For logs just replace it with Redis. Logs are not permanent by nature, and we keep only last 1000 records at the moment. Once the code change is done, we can start clean with Mongo
For persistent store we need to implement double-read. Since all records in Redis are subject of one month TTL max, we could remove double read after 1 month from deployment
