After some research looks like the sim toolkit problem exists in all/most
cyanogen based roms, apparently because it's not used in the states so nobody
cares about it. So this is not a problem specific to the LiquidNext rom.
Anyway, I just needed the STK to do credit top up, but luckily Vodafone offers
an app for this purpose so I'm happy now.

I use the sim menu as well, but my operator does not offer a alternative
program, is it possible to fix it? I use base Belgium.

It's not possible to fix as far as I know, even replacing the system stk.apk
with the version from stock rom won't fix it. I've changed to a galaxy s2
using stock ICS rom now so sorry can't be of more help!!
