This could be done by implementing an option to specify the label for tenant in the options. You could say that tenant = "Organization" and it would change all the field labels. Or maybe something like that was suggested in https://github.com/joas8211/payload-tenancy/issues/7#issuecomment-1535182683, so that it would find the tenant label from the existing config.
