Upgrade prom-client... again #9

Looks like they updated the prom-client again with a super handy new setDefaultLabels method. The upgrade also required a change to how you construct the Histogram and Gauge.

Thanks for this PR. I've increased the minor version, as it seems too big for a patch. I's now published on npm as v3.1.0
