You should notice in the doc that the user can build an image only with the corresponding host OS

Actually its only been recently that I've been unable to build ubuntu 20.04 LTS on anything but ubuntu. My build machine is a debian box, and its been building ubuntu and centos images for a while.

I agree that this should be suggested as the primary build mechanism (effectively self hosting), though I do want to dig into what changed with Ubuntu for this to be the case.
