Made log file & encoding configurable #16

Default log file is $PWD/embedmongo.log, which is not in the target folder. Default remains the same (although I argue it should be changed to ${project.build.directory}/embedmongo.log), but now the log file name & encoding are configurable via and configuration parameters.

Thanks. When will 0.1.7 be released so that I can remove my SNAPSHOT dependency?

Great. Thanks, Joe! Appreciate the plugin.

I've been thinking that it'd be nice to create a general embedxxx-maven-plugin that's generalized for any embeddable database (mongo, db4o, neo4j, orientdb, & even mysql, SQL Server LocalDB, derby, etc). The need comes up all the time for me.
