Update the old end-to-end tests #107

These are clunky. They are ran by shell scripts that don't maintain well and its just a pain. I think having a single end-to-end-tests.sh would be better, this could generate a sample pack, expain its logic with comments and assert the checksums all in one shell script

Don't merge until these tests have been meaningfully replaced with something better

Have just modernised these in the end

Need to make them run on the pipeline before merging
