fix: rendering with mkdocs-techdocs-core 1.2 #31

Looks like the mkdocs-material bump from 8 ~> 9 in https://github.com/backstage/techdocs-container/releases/tag/v1.2.0 changed how code highlight tables are rendered.

Support detecting mermaid code blocks in both versions.
