Exclude point_clouds.mdx #255

As the point_clouds.mdx file is still being worked on (https://github.com/johko/computer-vision-course/pull/253), we exclude it for now until it is finished.

I also slightly changed the intro, as we also have a chapter on diffusion model generated data.

But I think the problem is I cannot exclude files from the toctree that are present in the folder structure. I will always get the build error then. Is there some way to get around this? @merveenoyan
