I wanted to use the default GitHub Pages functionality in order to have an almost zero-config setup for the docs site, but Jekyll is showing its age in terms of its developer experience and available themes. I'm also not familiar enough with Python to be excited about managing Python versions and gems just to run Jekyll locally.
This PR switches the docs site over to VitePress, which is the static site generator that powers vitejs.dev as well as many other sites in the Vue ecosystem. Both the developer experience and the resulting documentation site is years ahead of Jekyll.
