Describe the bug
It's possible to set date format in settings to my preferred one (ISO 8601) and save it, but the format reverts back to default (US) at the next session.
To Reproduce
Steps to reproduce the behavior:
Change date format in settings of webUI, save.
Log out.
Log in.
Expected behavior
Date format remains ISO 8601.

Any configuration changes you made in docker-compose.yml, docker-compose.env or paperless.conf: set PAPERLESS_OCR_LANGUAGE, PAPERLESS_TIME_ZONE
