Refactoring and improving participant layout screen #174

A variety of fixes to improve participant UX. It's both stable and reasonably okay-looking on all screen sizes, except for large TV resolutions. Includes @James-Firth's work on buttons and colour palette.

This is a huge UI improvement, folks, thanks and good job!

One issue to consider still is that smaller screens have the table columns cropped up a bit, and in the case of having many fishers, they may not easily fit the screen. But we have lots of white space, and I think we could easily increase the size of real estate used by the table, while decreasing that of the ocean, to accomplish this. I'll create an issue.
