Press both the lower and the upper layer modifiers together, that should give you the adjust layer. Anyway, there are hw reset buttons on the boards (or at least could, of the original owner installed them).

Right, that's what I did. It doesn't work for some reason. I'll flash it again and figure it out.

For future reference, I understood from where my confusion stemmed.
What I called the "default" layout is, in fact, the "default" VIA layout. Those are radically different things.
With the default VIA layout, there's no ADJUST layer.
EDIT: I'd like to point out that VIA is proprietary software.
