Based on a comment from Josef, I've kept the development work & documentation in my seperate repo, and this PR includes links that point to it's documentation.
The Sofle_Pico folder included in this PR is the same as the dedicated Sofle Pico source repo. Even though that folder is duplicated between the two repos, I think it makes sense to keep it, so all the Sofle variants are available in one place.
Since the Pico can be flashed by dragging and dropping .uf2 files, the QMK PR is not really a blocker for people using the board. (People have already started building - hurray!)
The hardware is stable after multiple iterations.
