I feel your pain! I think the problem is, at least for me, I don't always watch shows in order, and so the behaviour you describe wouldn't be ideal.
There IS a way to bulk-watch seasons at a time; in summary view, if you click "Manage Show", the left-side modal lets you toggle a season at a time. This sometimes still needs a dozen or more clicks for long-running shows, but it feels much more manageable.
I agree that this is a pretty hidden feature though :( my fault for not making it more obvious/intuitive! Maybe I should pop an alert if I see the user toggle more than 10 episodes in a few seconds...

Some of my favorite shows are long-running ones (like NCIS), that have over a hundred episodes in the backlog. I'd like to be able to click on the latest episode I've seen and automatically have every older episode marked as watched, so I don't have to manually click hundreds of older episodes.
