Apologies for this. The instructions are updated. Compose handles variables differently than what I expected when they are included in the compose.yaml file. The fix is to revert to my previous example in using a separate env file and referencing that from the compose file.
Technically just removing quotes for the environment variables in the compose.yaml would fix it, but if you use special characters (especially $) in things like a password, it will have a bad time. Therefore, the env file is safer for everyone.
This worked a charm and now I vaguely remember being burnt by this issue before. Thanks for your quick response!
When launching the container for the first time using docker compose the container exits with error code 255 and the last message in the log is: "Config Error: Failed to parse Ip '0'"
