Keeping last three versions although 1.26 is technically EOL I assume many people still use it. Other versions will still be available by pinning the git sha on the k8s-libsonnet repo.

1.26 enters maintenance mode on 2023-12-28 and End of Life is on 2024-02-28.
This also cleans up custom/ a bit, deleting patches on removed versions.
