Turn `esp_fit_and_flex.py` into a CLI script

Done. The replacing CLI scripts are:

• fit_dependence.py
• plot_fit_dependence1.py and plot_fit_dependence2.py

The scripts dir got a bit messy, need to separate the old and new scripts.
