Relays are nodes that only forward your data or store it encrypted, so they don't actually have your data but can help with the network tasks, e.g. to ship around firewall issues.

You could also host a relay on your server and offer it for your friends to use, without being able to see their data.

Relays could also be WebRTC brokers.
