Update file names and add new version: `JUMP-Target-2-Compound` #13

[x] Clarify in README that Target-2 was the one used in production, and we therefore recommend copying that layout if the goal is to match the JUMP dataset. Target-1 will likely have a better layout because it meets all our initial design conditions described here https://github.com/jump-cellpainting/jump-cellpainting/issues/9#issuecomment-721419240

@niranjchandrasekaran please update this PR when you have the new layouts for JUMP-Target-2-Compound.

FYI The plan is to call this JUMP-Target-2 given the differing layout. I will change the issue name from 1b to 2.

All set! It turns out both sources point to the main JUMP-Target page and therefore don't need updating.
