I believe that the ProtonMail and the Tutanota servers are not open source. They just open sourced a few libraries and their clients. The servers are still proprietary as far as I'm aware.
And securecalender doesn't even have a license, which means all rights are reserved.

Does the list have to be necessarily fully open source products? Open source clients is still a big deal compared to an all proprietary product. I'll edit Secure Calendar out of the recos.

What use is an email client that uses non-standard protocols and therefore can't be used with other infrastructure than the providers?
It's like claiming Facebook is open source because you accesses it with an open source browser like Firefox. :wink:

This is just a list of options to consider. I have not vetted all of the items on this list and I'm not sure what the requirements are for a product to be added to the site. Some items here just have open source clients or other components, while others are fully open sourced.
Ethical (https://ethical.net/resources/) has a bunch of ethical alternatives and resources for popular services categorized by type (e.g. Analytics, Messaging, Blogging ... ). However they are not all open source.
For some 3D design: Blender (https://developer.blender.org/)
