Hotfix rdflib upgrade envs #121

Upgrade to rdflib >=6 which tombstones the rdflib-json-ld plugin and patches the issue with SERVICE calls. Update copyright info for 2022 🎉 and patch several test notebooks that had issues after resolving envs.

@nrbgt Can you give the diff a once over and make sure it doesn't look like I borked anything in the envs beyond repair in the future?
