JupyterLite deployment uses outdated version of the extension #40

JupyterLite deployment in the documentation needs to be updated to use the latest version of the jupyterlab-urdf extension. Currently, it uses v0.2.1.

Must wait for the next release of JupyterLite which supports JupyterLab 4.
