Restore binder environment with copy of main env #139

Looks like if the binder folder exists an environment.yml needs to be inside it. This one is a copy/paste of the main environment file we direct users to.

But I remember we can have the postBuild at the root if we want. That way we don't have a duplicate of the environment.yml file
