Update README lab install instructions #89

Update README to include --overwrite for lab install instructions. Without this flag the command does not work

This is in the generated readme (https://github.com/jupyter-widgets/widget-cookiecutter/blob/master/%7B%7Bcookiecutter.github_project_name%7D%7D/README.md), but not in the top-level readme. Thanks for the update!
