Converting a notebook to JATS for binder #750

I saw in the binder examples stencila repo that we have a Jupyter notebook in JATS form, which is pretty awesome! Do we know how that conversion was done? Is there a "standard" conversion tool from ipynb -> jats? Maybe @nuest knows? Would be great to have something like this we can point people to.

What's JATS? And do we still want an example for it?

JATS is a document format that is common in the scientific publishing ecosystem:

That said, I don't think that this is super actionable, so I'd be +1 on closing until we have a clearer path forward
