Add changelog for 1.0.1 #216

@manics note the following!

With the revert PR #218, this is now ready for a release of 1.0.1 again. I opted to omit the merge/revert PRs in this changelog.

I went for a self-merge and release on this so we can get to verifying the 1.0.1 release on conda ASAP. I won't be available much tomorrow or the next week so I felt a bit stressed getting this to land.
