Add changelog for v1.1.0 #260

Should it be 1.0.3 instead of 1.1.0?

I'm okay with whats chosen, just want a confirmation!

@yuvipanda can you go for the changelog only in this PR, then when you cut the release after changelog is merged, you can follow RELEASE.md that includes pushing a tag and commit directly etc.

It feels like the failsafe way of doing it, and ensures for example that the tagget commit has the changelog, and is actually the commit when we bump the version as well.

@consideRatio made it to v1.1.0, and got rid of the version bump commits.
