Bump version to 1.1.1 to include recent bugfixes #282

This updates the changelog using the github-activity package. I've tried to do this in accordance with the guidance here. I've then followed the instructions in the RELEASE.md to update the version number. I can't push back to the repo though because I do not have permission. So, I also can't tag the correct commit.

Note that I forgot to remove the welcome bot from the changelog until after making the release commit. I'm unsure how to reorder the commits, so at this point, the tag would correspond to a changelog that still has the welcome bot listed as a contributor. If this is an issue, I can try to start over.

I figured out how to squash and reorder commits, which in addition to making me feel really smart, solves the previous issue of the tag referencing the slightly wrong changelog.
