Hello, I see that you are inactive on this project, can you make a point on it, especially what works and what does not work. I am creating a yocto/openembedded distribution for the PS2, if you are interested, it's here : https://github.com/bignaux/meta-playstation2 .

The serial interface is working. No support for graphic or ethernet. U-boot need to be started by kernelloader. Maybe PS2 Linux boot disc can also be used.
