Add CHELSA elevation data bootstrap source. #57

With a small change we can make CHELSA input elevation data an option for bootstrapping. This would reduce the need for a separate elevation dataset (i.e. GEBCO) in case the user does not need bathymetry.

[x] Add bedrock, ~surface~ kwarg~s~ to bootstrap.
[x] Add 'chelsa', 'gebco' options ~for both~.
